Spicy Bean and Chorizo Dip
Spicy Bean and Chorizo Dip
3 oz. pork chorizo, casing removed
1 (16- oz.) can refried beans
1/4 cup plus 1 tbsp. red enchilada sauce, divided
1/4 cup sour cream
1/4 cup sliced green onions (green tops only)

Prep: 10 minutes, Cook: 5 minutes, Makes: about 2 cups

1. Cook chorizo in a small skillet for 5 minutes or until cooked through. Place onto a double layer of paper towels and drain well.

2. In a medium bowl, stir together chorizo, beans and 1/4 cup enchilada sauce. Pour into a serving bowl.

3. Stir together sour cream and remaining enchilada sauce and spread over bean mixture. Sprinkle with green onions. Serve with tortilla chips.
