Peanut Butter and Jelly Muffins
Peanut Butter and Jelly Muffins
2 cups flour
1/2 cup sugar
1 tbsp. baking powder
1/4 tsp. salt
1 cup milk
1/2 cup peanut butter
1 egg
2 tbsp. melted butter
1/3 cup jam (any kind)

Prep: 10 minutes, Cook: 20 minutes, Makes: 24 miniature muffins

1. Preheat oven to 350°F and spray 2 mini-muffin tins with nonstick cooking spray. Stir together flour, sugar, baking powder and salt in a small bowl.

2. In another bowl, whisk together milk, peanut butter, egg and melted butter. Add dry ingredients and stir until the flour disappears. Be sure not to stir too much!

3. Fill muffin tins half full with batter. Top each with 1/2 teaspoon jam, then spoon the rest of the batter over the top. Bake for 20 minutes or until lightly browned.
