Island Ice Cream
1/3 cup finely chopped dried pineapple
1/3 cup finely chopped dried mango
1/4 cup rum
1/4 cup Rose's Sweetened Lime Juice (in the Liquor Dept.)
1 pint good quality vanilla ice cream
3 tbsp. toasted coconut

Prep time: 15 minutes, Cook time: 10 minutes
Chill time: Several hours or overnight, Serves: 4

1. Place dried fruit, rum and lime juice in a small saucepan. Cook over low heat for 10 minutes or until liquid is absorbed. Remove from heat and place in the refrigerator to cool.

2. Transfer ice cream to a microwaveable glass bowl and microwave for 15 to 30 seconds on the defrost setting to soften slightly. Stir in fruit and coconut. Cover and return to the freezer until chilled.
