Curried Chicken, Corn and Tomato Salad
Curried Chicken, Corn and Tomato Salad
4 ears corn
3 cups grilled chicken, diced
1/2 cup halved grape tomatoes
1/2 cup sliced green onions
1/2 cup light olive oil vinaigrette
1 tsp. curry powder
Freshly ground pepper to taste
1 to 2 tbsp. chopped fresh parsley
1/2 cup pistachio kernels, coarsely chopped

Grill 4 ears corn until lightly charred; let cool, then cut away from cob. Place in a large bowl with 3 cups diced, grilled chicken, 1/2 cup each: halved grape tomatoes, sliced green onions and light olive oil vinaigrette and 1 tsp. curry powder. Season with freshly ground pepper to taste and a tbsp. or 2 of chopped fresh parsley, if you like. Top with 1/2 cup coarsely chopped pistachio kernels just before serving.

Makes 6 servings.
