Grape Quinoa Salad
Grape Quinoa Salad
1 (12- oz.) box white or red quinoa
3 cups water
3 cups red and green grapes halved
1/2 cup extra virgin olive oil
1/2 cup white balsamic vinegar
1/2 cup red onions minced
1 tbsp. honey
3/4 tsp. sea salt and pepper to taste
3/4 cup walnuts chopped, toasted

Cook 1 (12-oz.) box white or red quinoa in 3¾ cups water for 15 minutes; let stand for 10 minutes then fluff with a fork and let cool. Place in a large bowl with 3 cups halved red and green grapes, 1/2 cup each: extra virgin olive oil, white balsamic vinegar, minced red onion, thinly sliced celery and 1 tbsp. honey. Stir well and season with 3/4 tsp. sea salt and pepper to taste. Refrigerate for at least 1 hour for flavors to blend. Sprinkle with 3/4 cup chopped, toasted walnuts just before serving.

Makes 8 to 10 servings.
