Sicilian Eggplant Pizza
Sicilian Eggplant Pizza
2 tbsp. extra virgin olive oil, divided
3/4 cup chopped onion
3 cups peeled, chopped eggplant
1 cups seeded, chopped tomato
3 cloves garlic, minced
1/2 tsp. salt
Freshly ground pepper to taste
1 (12- oz.) package 7 -inch Mama Mary's Pizza Crusts
6 oz. fresh mozzarella cheese, thinly sliced
3 tbsp. shredded fresh Parmesan cheese
Snipped fresh basil

Prep: 15 minutes, Cook: 35 minutes, Serves: 8 to 10 appetizers

1. Heat 1 tbsp. olive oil in a medium nonstick skillet. Add onion; sauté over medium heat for 5 minutes.

2. Add remaining oil to the skillet, then add eggplant, tomato, garlic, salt and pepper. Cook over medium-low heat for 15 minutes or until eggplant is very soft, stirring frequently.

3. Preheat oven to 425°F. Top pizza crusts evenly with mozzarella, eggplant mixture and Parmesan. Bake for 15 minutes or until crust is lightly browned and cheese is melted.

4. Sprinkle with basil and cut into small wedges. Serve warm.
