Corned Beef Hash

1 tbsp. oil
1 tbsp. butter
1 large onion, peeled and chopped
2 medium baking potatoes
3 cups cooked corned beef, diced
Salt and pepper to taste

A great use for leftover corned beef! Serve for breakfast or dinner topped with a poached egg.

Prep: 10 minutes, Cook: 20 minutes, Serves: 4

Heat oil and butter in a large skillet. Add onion and potatoes; sauté for 10 minutes, stirring occasionally, over medium-high heat. Add corned beef and cook for 10 minutes more or until vegetables are golden brown. Season with salt and pepper and serve.
