Fresh Ginger Pear Cake
Fresh Ginger Pear Cake
1/2 cup butter, softened
3/4 cup brown sugar
1/2 cup molasses
1/2 cup light sour cream
2 eggs
1 tbsp. ginger, peeled and grated
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 cups ripe Bartlett pears peeled and chopped


Prep: 15 minutes, Cook: 35 to 40 minutes, Serves: 8

1. Preheat oven to 350°F and spray a 9-inch baking pan with nonstick cooking spray.

2. Beat butter with brown sugar until creamy. Add molasses, sour cream, eggs and ginger. Stir in flour, baking soda and salt. Fold in chopped pears and pour batter into prepared pan.

3. Bake for 35 to 40 minutes or until cake tests done when a toothpick is inserted in the middle. Serve with lightly sweetened whipped cream, if desired.
