Sweet and Sour Pork Tenderloin
Sweet and Sour Pork Tenderloin
1-1/2 to 2 lb. pork tenderloin
1 cups Basic Roasted Tomato Sauce (see separate recipe)

6 tbsp. pineapple juice
1/3 cup honey
1/4 cup unseasoned rice vinegar
3 tbsp. soy sauce
1/4 tsp. garlic powder
Prep time: 10 minutes, Cook time: 30 to 40 minutes

Rinse pork and pat dry. Place on a grill over medium heat and cook, turning several times, for 30 to 40 minutes or until internal temperature reaches 145°F. While pork is cooking, purée remaining ingredients in a blender or food processor. Transfer to a medium saucepan and bring to a boil; reduce heat and simmer for 15 minutes. Brush pork liberally with some of the sauce during the last 10 minutes of cooking. Slice pork 1/4-inch thick and serve with remaining sauce.
