Skirt Steaks with Chipotle Tomato Sauce
Skirt Steaks with Chipotle Tomato Sauce
1-1/2 cups Basic Roasted Tomato Sauce (see separate recipe)
1 small chipotle pepper + 2 tsp. adobo sauce from can minced
2 tbsp. fresh cilantro chopped
2 tsp. lime juice
4 rolled skirt steaks (about 1 lb.)
1 tbsp. Mexican seasoning
1 (4- oz.) can green chiles diced
2 oz. pepper Jack or Mexican cheese blend shredded
Prep time: 15 minutes, Cook time: 8 to 12 minutes

Stir together tomato sauce, chipotle pepper,
sauce, cilantro and lime juice in a small bowl; set
aside. Secure skirt steaks by inserting 2 bamboo
skewers into each roll; sprinkle both sides with
Mexican seasoning. Grill over medium heat for 4
to 6
minutes per side for medium. A few minutes
steaks are done, brush liberally with sauce and top
with equal amounts of chiles and cheese. Remove
from grill when cheese is melted. Serve with rice,
beans and remaining sauce.
