Sweet Coconut Almond Biscuits
Sweet Coconut Almond Biscuits
1 cups The Pure Pantry All Purpose Baking Mix, plus additional for kneading
1/4 cup organic butter, cubed
1/2 cup Blue Diamond Almond Breeze Vanilla Almond Coconut Blend, plus additional for brushing tops
3/4 cup Bob's Red Mill Fine Macaroon Coconut, divided
1/3 cup + 2 tbsp. organic sugar, divided
1/2 tsp. Simply Organic Cinnamon

Prep: 20 minutes, Cook: 25 minutes, Makes: 12 small biscuits

1. Preheat oven to 350°F and line a baking sheet with parchment paper. Mix baking mix and butter in a medium bowl with a pastry blender or fork. Stir in Coconut Breeze, 1/2 cup coconut and 1/3 cup sugar until a soft dough forms.

2. Gather into a ball and knead several times on a board coated lightly with additional baking mix. Pat 3/4-inches thick and cut into 2-inch circles with a floured cutter.

3. Stir together remaining 1/4 cup coconut, 2 tbsp. sugar and cinnamon in a medium bowl. Brush biscuits with additional Coconut Breeze and roll in coconut mixture. Place on prepared baking sheet and bake for 25 minutes or until biscuits are lightly browned.

Delicious with a bit of cinnamon honey butter: Stir together 1/4 cup softened organic butter, 1 tbsp. Island of the Moon Honey and 1/8 tsp. Simply Organic Cinnamon.
