Spicy Stuffed Chicken Breasts
Spicy Stuffed Chicken Breasts
4 Raley's boneless, skinless chicken breasts (about 1 lbs.)
1/3 cup tiny cubes Rumiano Habanero Jack Cheese (in our Deli)
3 tbsp. diced green chiles
2 tbsp. sliced ripe olives, drained
2 small green onions, sliced
2 tbsp. Mexican seasoning blend (like Morton & Bassett or Mrs. Dash Fiesta Lime)
1 tbsp. olive oil
1 cup red OR
1 green salsa

Habanero Jack packs quite a punch. Substitute Monterey Jack or Pepper Jack for a bit less heat.

Prep: 20 minutes  Cook: 20 to 25 minutes  Serves: 4

1. Make a long lengthwise slit in each chicken breast to form a large pocket. Stir together cheese, chiles, olives and onions in a small bowl. Stuff equal amounts into each chicken breast and secure with toothpicks. Sprinkle seasoning on all sides of chicken. 

2. Heat oil in a large nonstick skillet over medium heat. Add chicken and cook for 5 minutes on each side to lightly brown. Pour salsa over top and reduce heat to low. Tent with foil and cook for 15 minutes more or until chicken is cooked through.
