Sweet Savory Quinoa Salad
Sweet Savory Quinoa Salad
2 cups water
1 cup quinoa
1/3 cup apricot or mango chutney
1/4 cup lime juice
2 tbsp. extra virgin olive oil
1/4 tsp. salt
1/2 cup each: raisins, golden raisins, garbanzo beans and diced red bell pepper
1/3 cup red onion finely chopped
2 tbsp. each: chopped fresh parsley and mint
Freshly ground pepper to taste
1/2 cup Raley's Totally Nuts Sweet & Spicy Pecans coarsely chopped

 Simple to make ahead, this recipe may easily be doubled for a crowd.

Prep: 25 minutes  Cook: 22 minutes  Stand: 10 minutes  Chill: at least 1 hour  Serves: 6

1. Bring water to a boil in a medium saucepan. Rinse quinoa in a fine mesh sieve and drain well. Add to boiling water; reduce heat and simmer, covered, for 12 minutes. Remove from heat and let stand for 10 minutes. Fluff with a fork and let cool. 

2. Whisk together chutney, lime juice, olive oil and salt. Stir into quinoa mixture, then lightly stir in remaining ingredients except nuts. Cover and chill for at least 1 hour. Top with nuts just before serving. Recipe may be doubled.
