Vegetable Soft Tacos
1 large onion, quartered and sliced
1 cup 1/4 -inch cubes butternut squash
1 cup diced red bell pepper
1 (8- oz.) package sliced mushrooms
1 tbsp. vegetable oil
1 (8-oz.) pouch Frontera Taco Sauce
8 small corn or flour tortillas, warmed
1 cup shredded Monterey Jack Cheese
Fresh cilantro leaves, torn

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Cook vegetables in oil in a large skillet over medium-high heat for 10 minutes, stirring frequently. 

2. Stir in sauce; cover and cook for 5 minutes more. Spoon mixture into tortillas and top with cheese and cilantro.
