Shortcut Chipotle Chilaquiles
Shortcut Chipotle Chilaquiles
1 (16- oz.) jar salsa
1/2 tbsp. chipotle peppers in adobo sauce
2 green onions, sliced
7 cups thick cut tortilla chips (like Raley's)
1 cup Raley's Shredded Mexican Blend Cheese
4 eggs

Prep: 5 minutes, Cook: about 5 minutes, Serves: 4

1. Puree salsa with chipotle peppers in adobo sauce and green onions.

2. Pour into a large skillet and bring to a boil. Add tortilla chips and stir to coat.

3. Cover and cook for 2 to 3 minutes to heat through. Sprinkle with 1 cup cheese; cover and cook for 2 minutes more. Top with fried eggs and serve.
