Mango and Macadamia Nut Pastries
Mango and Macadamia Nut Pastries
1 (10- oz.) package frozen puff pastry shells thawed
1/4 cup butter
2/3 cup brown sugar
3 mangoes (about 3 cups) peeled, pitted and chopped
1 tsp. coconut extract
1/4 cup coarsely chopped macadamia nuts
Vanilla ice cream (optional)
shredded coconut (optional) toasted
mint sprigs (optional)
Prep time: 15 minutes, Cook time: 20 to 25 minutes

Preheat oven to 400F. Place puff pastry shells on a baking sheet and cook for 20 to 25 minutes or until puffed and lightly browned. Remove from oven and let cool, then remove center piece of dough from puff pastry to form a shell. Meanwhile, melt butter in a medium saucepan. Add brown sugar, mangoes and extract. Cook and stir over medium heat for 15 to 20 minutes or until thickened and caramelized; let cool slightly (mixture will thicken as it cools). Place puff pastry shells on individual dessert plates. Fill each with mango mixture and sprinkle with macadamia nuts. Serve with a very small scoop of ice cream, if desired, and garnish with coconut and mint.
