Fresh Tomato Artichoke Sauce
Fresh Tomato Artichoke Sauce
1 tbsp. olive oil
1 cup onion, chopped
4 cloves roasted garlic, chopped
1 (22- oz.) bag Tesoro Roma Tomatoes
1 (6.5- oz.) jar marinated artichoke hearts, drained and chopped
Salt, pepper and sugar to taste
1/4 cup snipped fresh basil

Prep: 15 minutes, Cook: 10 minutes, Makes: about 2 cups

1. Heat oil in a large skillet. Add onion and garlic; cook over medium heat for 5 minutes to soften.

2. Dice tomatoes and add to skillet with artichoke hearts; cook for 5 minutes more. Season to taste with salt, pepper and sugar and stir in basil.

3. Serve over hot cooked pasta or use as a pizza sauce or topper.
