Smoky Bruschetta Polenta
Smoky Bruschetta Polenta
1 (16- oz.) tube polenta
1 cup smoked mozzarella cheese (in our Deli) shredded
1 cup diced Tesoro Roma Tomatoes
1 tbsp. snipped fresh basil
1 tbsp. extra virgin olive oil
1 tbsp. balsamic vinegar
1 clove garlic, minced

Prep: 15 minutes, Cook: 8 to 10 minutes, Serves: 4 to 6

Cut 1 (16-oz.) tube polenta into 12 circles. Brush with olive oil and grill over high heat for about 2 minutes on each side or until nicely grill marked. Place on an oiled piece of foil set on the grill and sprinkle with 1 cup shredded smoked mozzarella cheese (in our Deli); cook until melted. Stir together 1 cup diced Tesoro Roma tomatoes, 1 tbsp. each: snipped fresh basil, extra virgin olive oil and balsamic vinegar and 1 clove minced garlic. Season to taste with salt and pepper and spoon over warm polenta.
