Grilled Chicken with Tomatillo Sauce
Grilled Chicken with Tomatillo Sauce
1 lb. fresh tomatillos, washed and husked
2 Anaheim chile peppers
2 green onions, sliced
2 cloves garlic, minced
1 to 2 jalapeņo peppers seeded and diced
1/2 cup lightly packed fresh cilantro leaves
2 tsp. fresh lime juice
1 tsp. sugar
Salt and pepper to taste
4 boneless, skinless chicken breast fillets
Garlic salt

Prep: 15 minutes, Cook: 25 minutes, Serves: 6

1. To make sauce, grill tomatillos and Anaheim peppers over medium heat; cook for 5 minutes, turning frequently, until tomatillos are lightly charred. Remove tomatillos from grill and place in a bowl; set aside.

2. Continue to cook peppers until lightly charred; remove from grill and place in a small brown bag. Let stand for 5 minutes, then remove skin, stems and seeds.

3. Place all sauce ingredients in a food processor or blender* and process until finely chopped. Place mixture in a small saucepan and simmer for 5 minutes. Remove from heat and keep warm.

4. Brush chicken with oil and sprinkle lightly with garlic salt. Grill over medium heat for 10 minutes or until internal temperature reaches 165°F, turning occasionally. Remove from grill and serve with warm sauce.

*Use caution when blending hot liquids. Hold blender lid down with a kitchen towel while blender is running.
