Tomato Herb Grilled Shrimp
Tomato Herb Grilled Shrimp
1/3 cup sun dried tomato spread
3 tbsp. red wine vinegar
1/2 tsp. crushed red pepper flakes
2 cloves garlic, minced
1 lb. large peeled and deveined shrimp
Mixed greens (optional)

Prep: 10 minutes, Marinate: 10 minutes
Cook: 7 to 10 minutes, Serves: 2 large or 3 small

1. Mix together all ingredients except shrimp and greens in a small bowl. Stir in shrimp and let marinate for 10 minutes.

2. Grill shrimp over medium heat for 7 to 10 minutes or until pink, turning and brushing occasionally with excess marinade. (Discard any remaining marinade.)

3. Serve over mixed greens, if you like.
