Mediterranean Fillo Cheese Triangles
1 cup shredded Parrano Cheese (in our Deli)
1/4 cup shredded Grana Padano or Parmesan cheese (in our Deli)
1/2 cup Mezzetta Roasted Bell Peppers, patted dry and coarsely chopped
1/2 cup Mezzetta Pitted Bistro Blend Olives, coarsely chopped
1/4 cup California Sun-Dry Smoked Sun-Dried Tomatoes, minced
2 tbsp. pesto
1 tsp. Mezzetta Crushed Garlic
14 sheets Athens Fillo Dough (in our frozen foods section, near the desserts), thawed
Olive oil cooking spray

Prep: 30 minutes, Cook: 15 minutes
Makes: about 25 appetizers

1. Preheat oven to 425°F and line a baking sheet with parchment paper. Stir together all ingredients except fillo and cooking spray in a medium bowl.

2. Unroll fillo dough on a board and keep covered with a sheet of plastic wrap then a damp towel. Place 1 sheet fillo on a board and coat with cooking spray. Top with a second sheet. Cut into 4 strips crosswise.

3. Place a tablespoon of filling in the bottom corner of each strip. Fold dough over, like folding a flag, pressing edges lightly to make sure filling is fully enclosed. Place on prepared baking sheet and coat with cooking spray. Bake for 15 minutes or until golden brown.
