Chicken, Rice and Chorizo Skillet
Chicken, Rice and Chorizo Skillet
1 link Aidells Chicken Chorizo, cut into 1/4-inch cubes
1 lb. Raley's boneless, skinless chicken breasts, cut into 1/2-inch cubes
1 large onion, chopped
1 tbsp. vegetable oil
1 cup Amalia's Cocina Enchilada Sauce
1/2 cup corn
1 (8.8- oz.) package Uncle Ben's Spanish Style Ready Rice
1 (4- oz.) can diced green chiles
Sliced avocado
Snipped fresh cilantro (optional)

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Cook chorizo, chicken, onion and oil in a large nonstick skillet for 5 minutes over medium-high heat, stirring frequently. Stir in enchilada sauce, corn, rice and chiles.

2. Cook, covered, over medium-low heat for 10 minutes more. Serve with sliced avocado and fresh cilantro, if you like.
