Island Pineapple Shrimp
Island Pineapple Shrimp
1/3 cup fresh lime juice
2 tbsp. butter, melted
1 tbsp. honey
1 tbsp. minced fresh ginger
2 cloves garlic, minced
1 cup juice packed cubed pineapple
2 bell peppers, seeded and cubed
1 small red onion, cubed and separated
1-lb jumbo raw shrimp (21 to 25 count), peeled and deveined

Top with toasted coconut and serve over rice cooked in coconut milk, if you like.

Prep: 20 minutes, Cook: 8 to 10 minutes, Serves: 6

1. Place lime juice, butter, honey, ginger and garlic in a medium bowl; set aside. Thread pineapple, vegetables and shrimp onto skewers.

2. Grill over medium heat for about 4 to 5 minutes on each side, or until shrimp is very pink, brushing with lime juice mixture during cooking. Remove from grill and transfer to a serving platter.
