Ginger Walnut Biscotti Bites
Ginger Walnut Biscotti Bites
1/3 cup butter softened
2/3 cup sugar
2 eggs
1 tsp. vanilla extract
2 cups flour
1 tbsp. Gingerbread Spice Mix (separate recipe)
2 tsp. baking powder
1/4 tsp. salt
3/4 cup Raley's Walnut Pieces

Drizzle one side with melted white chocolate, if you like

Makes: about 3 dozen

1. Preheat oven to 350°F and line a large baking sheet with parchment paper. Beat butter and sugar together in a large bowl until light and fluffy. Add eggs one at a time, beating well after each addition; stir in extract.
2. Stir together flour, Gingerbread Spice Mix, baking powder and salt in a small bowl, then add to butter mixture. When mixture forms a thick dough, stir in walnuts. Knead for 30 seconds on a floured board, then shape into two long 12 X 1½-inch logs on prepared baking sheet; press top to flatten slightly. Bake for 20 minutes, then let cool slightly. Reduce oven temperature to 200°F. Cut biscotti into 1/2-inch pieces with a very sharp knife and place back on baking sheet; turn and bake for 15 minutes more.
