Cranberry Wild Rice Salad
Cranberry Wild Rice Salad
1 (10.5- oz.) package Fall River Precooked Wild Rice
1/3 cup dried cranberries
1/4 cup red bell pepper chopped
1/4 cup celery chopped
1/3 cup vegetable oil
1/4 cup rice vinegar
1 tbsp. sugar
1 tsp. basil
1/4 tsp. salt or to taste
pepper to taste Freshly ground
Prep time: 10 minutes, Chill time: several hours

Stir together rice, cranberries, bell pepper and celery in a medium bowl. Whisk together remaining ingredients in a small bowl and pour over salad. Chill for several hours before serving.

Makes 4 to 6 servings. Recipe may be doubled.
