Cider Glazed Sweet Potatoes
Cider Glazed Sweet Potatoes
1 1/2 lb. sweet potatoes peeled and cubed
1 1/2 lb. yams peeled and cubed
1 cup apple cider
1/4 cup brown sugar
2 tbsp. organic butter
1 tsp. apple pie spice
Prep time: 15 minutes, Cook time: 15 minutes

Place sweet potatoes and yams in a large pan
fitted with a steamer basket. Bring water to a boil;
steam, covered, for 15 minutes or until potatoes
are tender when pierced with a fork. Remove from
heat; place in a food processor with remaining
ingredients. Process until smooth and creamy,
then season to taste with salt and pepper. If
making ahead, thin with additional cider as
needed before serving.

Makes 8 servings.
