Candied Pumpkin Seeds
Candied Pumpkin Seeds
2 cups sugar
1/4 cup water
1 cup unsweetened coconut flakes
1 cup raw pumpkin seeds

This sweet treat is traditionally set out to snack on before the Lunar New Year meal.

Prep: 5 minutes, Cook: 10 minutes, Serves: 8

1. Stir together sugar and water in a medium saucepan. Bring to a boil without stirring and cook until mixture turns golden brown, swirling pan occasionally. Quickly stir in coconut flakes and pumpkin seeds.

2. Spread in a single layer on a parchment-lined baking sheet and let cool. Break into 1/2-inch pieces.
