Mediterranean Mahi Mahi Sandwich
Mediterranean Mahi Mahi Sandwich
1 (6-oz.) cup plain Greek yogurt
1/3 cup cucumber coarsely grated, peeled
2 tsp. lemon juice
2 tsp. fresh mint or dill chopped
1 clove garlic, minced
Salt and pepper to taste
1 tbsp. olive oil
1 (12- oz.) package Full Circle Natural Mahi Mahi Fillets, thawed and patted dry
1/2 tsp. garlic salt
Freshly ground pepper to taste
1 tbsp. each: lemon juice and white wine
3 pita bread rounds, halved
1 cups romaine lettuce, thinly sliced
3/4 cup each: diced tomato and slivered red onion

Prep: 15 minutes, Chill: 1 hour, Cook: 10 minutes, Serves: 3

1. Stir together all tzatziki ingredients in a small bowl. Cover and refrigerate for at least 1 hour.

2. Heat oil in a large skillet over medium-high heat. Season fish with garlic salt and pepper and add to skillet; cook for 2 minutes or until golden brown. Turn and cook for 2 minutes more. Add lemon juice and white wine to skillet and cook until fish is very flaky.

3. To assemble sandwiches, place equal amounts of lettuce in each pita half. Break fish into chunks and place over lettuce; top with tomato and onion and serve with tzatziki.
