Sweet Spiced Yam Donuts
Sweet Spiced Yam Donuts
2 cups flour
1/2 cup sugar
2 tsp. baking powder
1 tsp. McCormick Pumpkin Pie Spice
1/4 tsp. baking soda
1/3 cup mashed yam
1/3 cup milk
2 tbsp. melted butter
1 tsp. vanilla extract
1 egg
Vegetable oil for frying
2 cups powdered sugar
3 oz. cream cheese
3 tbsp. honey
1/2 tsp. McCormick Pumpkin Pie Spice
1/4 tsp. vanilla extract

Prep: 30 minutes Cook: 10 minutes Serves: 8

1. Stir together all dry ingredients in a large bowl. Beat together yams, milk, butter, vanilla and egg in a separate bowl, then stir into dry ingredients. (Dough will still be sticky. Resist the urge to add too much flour.)
2. Turn onto a lightly floured board, then pat or roll 3/4-inch thick. Cut with a
2½-inch round cutter, then cut out center with a 3/4-inch cutter (or cut circle from the center with a small sharp knife). Reroll scraps to use all dough.
3. Heat oil to 375°F in a large heavy pot until oil pops when a few drops of water are added. Add donuts to hot oil a few at a time and cook for about 1 minute on each side or until golden brown. Remove and drain well. Let cool before spreading with Spiced Honey Cream Cheese Frosting: Beat 2 cups powdered sugar, 3 oz. cream cheese, 3 tbsp. honey, 1/2 tsp. McCormick Pumpkin Pie Spice and 1/4 tsp. vanilla extract in a medium bowl until smooth and creamy.
