Bite-Size Berry Tarts
2 (1.9 oz.) box Athens Mini Fillo Shells
1 (8-oz.) package cream cheese
2 tbsp. honey
2 tbsp. sugar
1 tsp. vanilla extract
3/4 cup fresh raspberries
3/4 cup fresh blueberries
1/2 cup melted apricot jam (or Berry Basket Freezer Jam)
2 tbsp. sliced toasted almonds or honey roasted sliced almonds

Prep: 15 minutes, Cook: 5 minutes, Makes: 4 to 6 servings

1. Preheat oven to 350ºF. Crisp fillo shells according to package directions; let cool.

2. Stir together cream cheese, honey, sugar & vanilla in a medium bowl.

3. Place about a teaspoon of cream cheese in each shell and top with raspberries and blueberries.

4. Brush lightly with melted jam and garnish with sliced almonds and a small mint leaf. Chill until ready to serve.

Tip: If you're making this dish for adults, try stirring a tablespoon or two of amaretto into the cream cheese before spooning into shells.
