2 frozen puff pastry shells
1 tbsp. butter
4 eggs, beaten
1/3 cup diced Brie cheese
2 tbsp. chopped tomato
1 tbsp. snipped fresh chives, tarragon or chervil
Freshly ground sea salt and pepper to taste

Prep: 20 minutes, Cook: 20 minutes, Serves: 2

1. Preheat oven to 400°F and place frozen puff pastry shells on a baking sheet. Cook for 20 minutes or until golden brown. Remove center piece to form a shell.

2. Just before pastry is done, melt butter in a small skillet. Add eggs and cook, stirring frequently, until eggs are just set. (Do not overcook.)

3. Stir in cheese, tomato and tarragon; season to taste with salt and pepper.
