Blueberry Balsamic Salmon
Blueberry Balsamic Salmon
1/2 cup fresh blueberries
2 tbsp. balsamic vinegar
2 tbsp. honey
1 tbsp. lemon juice
2 (6- oz.) salmon steaks or fillets
Salt and freshly ground pepper, to taste

Prep: 10 minutes, Cook: 20 minutes, Serves: 2

1. Combine blueberries, vinegar, honey and lemon juice in a small saucepan and bring to a boil. Reduce heat and simmer over very low heat for 10 minutes.

2. Meanwhile, rinse salmon and pat dry. Brush lightly with oil and season with salt and pepper.

3. Grill for about 5 minutes per side over medium heat. When salmon is cooked to your liking, remove from grill and drizzle with blueberry glaze.
