Ponzu Pickled Cucumber
Ponzu Pickled Cucumber
1 hot house cucumber
1/2 cup unseasoned rice vinegar
1/4 cup Kikkoman Ponzu Citrus Seasoning
2 tsp. sugar
2 tsp. sesame oil
2 tsp. Sriracha Hot Sauce (on our Asian Foods aisle)
8 thin slices fresh ginger
snipped fresh cilantro (optional)

Prep: 10 minutes, Serves: 8

Thinly slice 1 hot house cucumber and place in a large glass bowl. Add 1/2 cup unseasoned rice vinegar, 1/4 cup Kikkoman Ponzu Citrus Seasoning, 2 tsp. each: sugar, sesame oil and Sriracha Hot Sauce and 8 thin slices fresh ginger. Cover and refrigerate for at least several hours. Sprinkle with snipped fresh cilantro, if you like.
