Ginger Beef Salad
Ginger Beef Salad
1 lb. Raley's Beef petite top sirloin steak California raised USDA choice
1/2 cup plus 3 tbsp. Soy Vay Veri Veri Teriyaki Sauce (or thick teriyaki sauce)
2 tbsp. rice vinegar
2 tbsp. vegetable oil
2 tbsp. dry sherry
1 tsp. sugar
1 (8- oz.) bag Dole Field Greens Salad Blend
1 cup red bell peppers
1 cup canned mandarin orange slices
1/3 cup green onions
2 tbsp. fresh ginger
1/3 cup roasted and salted peanuts
Cut beef into 3/4-inch wide slices and place in a resealable bag with 1/2 cup teriyaki sauce. Seal and refrigerate for at least 1 hour to marinate. Remove beef from marinade and grill over medium-high heat for about 3 minutes on each side. Let cool slightly then cut into bite-size strips. Just before serving, whisk together remaining teriyaki sauce, rice vinegar, sherry, oil and sugar. Place greens in a large bowl and drizzle with dressing; toss well to coat. Place equal amounts of greens on 4 salad plates and top with beef, bell peppers, mandarin oranges, onions, ginger and peanuts.
