Margarita Chicken
4 Raley's boneless, skinless chicken breasts (about 1 lbs.)
3/4 cup margarita mix
6 tbsp. fresh lime juice
6 tbsp. gold tequila
1/4 cup orange liqueur (like Grand Marnier, triple sec or Cointreau)
1/2 tsp. salt
1/4 tsp. pepper
Lime wedges (optional garnish)
Cilantro (optional garnish)

Prep: 5 minutes, Marinate: 1 hour, Cook: 10 minutes, Serves: 4

1. Place chicken in a resealable bag and add remaining ingredients. Seal and refrigerate for 1 hour.

2. Cook on a well-oiled grill over medium-high heat for about 5 minutes per side or until lightly charred and cooked through.

3. While chicken is cooking, pour marinade into a small saucepan. Cook over medium-high heat until reduced by half and slightly thickened. Serve over chicken and garnish with lime wedges and cilantro.

Tip! This chicken is great chilled, too! Serve over romaine lettuce and top with a sprinkle of crushed tortilla chips with a hint of lime.
