Egg Sandwiches with Bacon Jam
Egg Sandwiches with Bacon Jam
1 lb. good quality bacon, chopped
1 large onion, finely chopped
4 cloves garlic, minced
1 cup Belgian Abbey-style ale
3 tbsp. pure maple syrup
3 tbsp. Grama's Sweet Chilli Sauce
Salt and pepper to taste
6 to 8 english muffins, toasted
6 to 8 fried eggs

This crazy jumble of ingredients is so delicious, our SE team couldn’t stop eating it! The bacon jam is also great spread over a wedge of Brie or on a turkey sandwich.

Prep: 20 minutes, Cook: 40 minutes, Serves: 6 to 8 

1. Cook bacon in a large skillet until very crisp; remove and drain on paper towels. Drain all but 1 tablespoon of bacon grease from skillet. Add onion and garlic and cook for 10 minutes or until translucent, stirring frequently.

2. Add beer, syrup and chilli sauce to skillet and bring to a boil. Reduce heat and cook for 30 minutes or until thick and golden, stirring frequently. Stir in bacon and season with salt and pepper.

3. Spread a spoonful of bacon mixture onto 1 side of each English muffin and top with fried eggs. Close sandwiches.
