Golden Chickpea Fries with Curried Mango Ketchup
Olive oil
2 cups Bob's Red Mill Garbanzo Bean Flour
1 tsp. sea salt or to taste
2 cups water
1-1/2 cups Belgian ale
2 cloves garlic, minced
Canola oil for frying
1 cup ketchup
1/4 cup chutney
4 tsp. curry powder

Prep: 20 minutes  Cook: 15 minutes total  Chill: 1 hour  Serves: 4 to 6 

Lightly brush a 13 X 9-inch baking dish with olive oil. Place garbanzo bean flour and salt in a large saucepan. Slowly whisk in water and ale, then add garlic. Bring to a boil; reduce heat slightly and cook for a few minutes or until thick, stirring constantly.

2. Spread evenly into prepared dish and let cool, then cover and refrigerate for 1 hour or until very firm.

3. Meanwhile, stir together ketchup, chutney and curry powder in a small bowl.

4. Cut garbanzo mixture into 4 equal pieces and remove from pan. Pat dry with paper towels and cut 1/2-inch wide “fries.” Cook in several batches in hot oil until golden brown, then drain well on paper towels. Sprinkle with additional salt, if you like. Serve immediately with Curried Mango Ketchup.
