Pistachio Pecorino Panini
Pistachio Pecorino Panini
1/4 cup grated Pecorino or Parmesan cheese
2 tbsp. butter, softened
1 (10- oz.) loaf Nob Hill Trading Co. Country French Bread, cut into 16 slices on the diagonal
2/3 cup shredded smoked mozzarella cheese (in our Deli)
1/3 cup pistachios, coarsely chopped
2 tsp. chopped fresh herbs (basil, sage and rosemary)
2 tsp. snipped fresh chives

Prep: 15 minutes, Cook: 5 to 10 minutes, Serves: 4  

1. Stir together cheese and butter in a small bowl. Spread one side of each bread slice with mixture; turn slices over. Place equal amounts of mozzarella, pistachios, herbs and chives on half the bread. Top with remaining bread, buttered side up.

2. Cook over medium heat in an oiled panini press for 5 minutes or in a large nonstick skillet for 3 to 5 minutes on each side or until nicely browned. Serve warm.

TIP: No panini press? A large skillet will do! Press sandwiches down with the bottom of another  skillet or an inverted plate while cooking.
