Pumpkin Apple Bisque
Pumpkin Apple Bisque
2 tbsp. butter
1-1/2 cups chopped onion
1 cup peeled, chopped green apple
2-1/2 cups vegetable broth
1 cup Raley's Canned Pumpkin
1/8 tsp. ground cinnamon
1/8 tsp. ground ginger
1/2 cup whipping cream
Freshly ground salt and pepper to taste

Prep: 15 minutes, Cook: 45 minutes, Serves: 4

1. Melt butter in a medium saucepan over medium heat until it’s lightly browned and fragrant. Add onions and cook for 5 minutes, stirring occasionally. Add apple; cook and stir for 5 minutes more.

2. Stir in broth, pumpkin and spices and bring to a boil; reduce heat and simmer, covered, for 30 minutes.

3. Let cool slightly, then carefully puree in a blender* or with a stick blender then stir in cream, salt and pepper. Cook just until hot.

*Always use caution when working with warm soup.
