Buttery Garlic Herb Sweet Potatoes
Buttery Garlic Herb Sweet Potatoes
4 lbs. sweet potatoes, peeled and sliced 1/4-inch thick
2 tbsp. extra virgin olive oil
2 tbsp. balsamic vinegar
1-1/2 tbsp. honey
1 tsp. sea salt or to taste
1/4 cup butter
1/2 tbsp. chopped fresh basil
1/2 tbsp. chopped thyme
1/2 tbsp. chopped parsley
4 cloves garlic, minced
Freshly ground pepper to taste

Unlike traditional holiday sweet potato recipes, this is a savory dish. Sweet potatoes have a tan skin and cream-colored flesh. 

Prep: 20 minutes, Cook: 20 minutes, Serves: 8

1. Preheat oven to 450°F and line 2 large baking sheets with parchment paper. Toss sweet potatoes with oil, vinegar and honey and place in a single layer on baking sheets; sprinkle with salt. Cook for 10 minutes, then turn and cook for 10 minutes more or until tender.

2. While potatoes are cooking, melt butter with herbs, garlic and pepper. Place cooked potatoes in a large bowl and toss with herb butter. 

Make-ahead tip: Roast sweet potatoes and yams a day or two before and refrigerate. Just before serving, bake at 400°F in a shallow baking dish to warm, then toss with butter mixture.
