3 cups Simply Potatoes Diced Potatoes with Onion
1 tbsp. oil
2 cups diced ham or turkey ham
1 cup Raley's Fresh Diced Tri-Peppers (in our Produce Dept.)
1 small onion, chopped
Seasoned salt and pepper to taste
4 eggs

Prep: 10 minutes, Cook: 20 minutes, Serves: 4

1. Cook potatoes in oil in a large skillet over medium- high heat for 10 minutes. Add ham, tri-peppers and onion; cook, stirring frequently, for 10 minutes. Season to taste with salt and pepper.

2. Meanwhile, fry or poach eggs as you like. Divide potato mixture equally; top each with 1 egg.
