Lemon Bran Muffins

2 cups bran flake cereal
1 cups Blue Diamond Vanilla Almond Coconut Almond Breeze
1 (5.3- oz.) container Chobani Lemon Greek Yogurt
1/4 cup Meyer lemon juice
1/3 cup canola oil
1 tsp. vanilla extract
2 eggs
1 cups Kodiak Frontier Flapjack and Waffle Mix
1/3 cup sugar
1 cup fresh blueberries
Zest of 1 Meyer lemon

Prep: 15 minutes, Stand: 10 minutes  
Cook: 20 to 25 minutes, Serves: 12

1. Preheat oven to 375°F and line 12 muffin cups with paper liners. Stir together bran flakes and almond milk in a medium bowl; set aside for 10 minutes to soften. 

2. Stir together yogurt, lemon juice, oil, extract and eggs in a large bowl; stir in bran flake mixture. Add pancake mix and sugar, stirring just until dry ingredients are moistened (do not over mix). Lightly stir in blueberries and lemon zest.

3. Spoon into lined muffin cups and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
