Champagne Chicken
1 tbsp. buttery spread
1 Raley's boneless, skinless chicken breast, cut into 6 pieces
2 tbsp. flour
1/4 cup mini carrots
1/4 cup coarsely chopped Mycopia Specialty Trio Mushrooms
3/4 cup champagne or sparkling wine
1/4 cup 1-inch pieces asparagus
1 packet Swanson Chicken Flavor Boost (from a 1.96-oz. box)
1 pinch herbes de Provence

Prep: 15 minutes, Cook: 10 minutes, Serves: 2

1. Melt buttery spread in a large skillet over medium-high heat. Flatten chicken breast and cut into 6 pieces; coat with flour. Add to skillet and cook for 5 minutes.

2. Turn and add carrots and mushrooms. Cook and stir for 5 minutes more.

3. Add champagne, asparagus and flavor boost. Cook until mixture is saucy. Add a pinch of herbes de Provence and sprinkle with chopped fresh parsley, if you like.
