Green Pea and Potato Griddle Cakes
Green Pea and Potato Griddle Cakes
1 lb. russet potatoes, peeled and cut into chunks
1/2 cup frozen petite peas, thawed
3/4 cup shredded sharp white Cheddar cheese
2 tbsp. minced Italian parsley
1/4 tsp. sea salt
Freshly ground pepper to taste
6 strips crisp cooked bacon, coarsely crumbled
2 green onions, minced
1 egg
2/3 cup panko breadcrumbs
3 tbsp. good quality olive oil

Creamy potato meets crispy crust with lots of flavorful additions.

Prep: 20 minutes, Cook: about 20 minutes, Serves: 4

1. Place potatoes in a microwave-safe bowl and cover with plastic wrap. Make a small slit in the wrap and microwave on HIGH for 7 minutes or until tender.

2. Add peas to bowl and mash well. Stir in cheese, parsley, salt, pepper, bacon, green onions and egg.

3. Shape into 4 (1-inch thick) patties and roll in bread crumbs to coat all sides.

4. Heat oil in a large skillet over medium-high heat. Add potato patties and cook for 5 minutes on each side or until golden brown. Serve immediately.
