Mango Meatball Banh Mi Sandwiches
Mango Meatball Banh Mi Sandwiches
1 cup julienne strips fresh mango
1 cup thinly sliced carrot ribbons (sliced with a vegetable peeler)
1/3 cup thinly sliced jalapeņo peppers (remove seeds from peppers if you prefer less heat)
1/3 cup lightly packed fresh cilantro sprigs
2 tbsp. rice vinegar (unseasoned)
1 tbsp. sugar
1 (12- oz.) package Aidells Teriyaki & Pineapple Chicken Meatballs
4 sweet French rolls (in our Bakery)

Prep: 20 minutes, Cook: 5 minutes, Serves: 4  

1. Stir together mango, carrots, peppers, cilantro, vinegar and sugar in a medium bowl.

2. Heat meatballs in a medium skillet over medium heat for 5 minutes, stirring frequently.

3. Cut rolls open without cutting fully in half. Place 3½ meatballs in each roll, then top equally with vegetable mixture. Serve immediately.
