Pickled Mango, Bacon and Avocado Sandwich
Pickled Mango, Bacon and Avocado Sandwich
3/4 cup very thinly sliced ripe mango
1/2 cup halved and very thinly sliced red onion
2 tbsp. lime juice
2 tsp. extra virgin olive oil
2 tsp. agave nectar or honey
1 clove garlic, minced
8 slices whole grain or crusty French bread, cut on the diagonal to make larger slices
1 firm but ripe avocado, peeled, pitted and mashed
6 strips cooked, crisp bacon, halved

Prep: 5 minutes, Stand: 15 minutes, Serves: 4

1. Place mango, onion, lime juice, olive oil, agave and garlic in a small bowl; toss well to coat. Let stand for 15 minutes.

2. Spread avocado over half the bread slices. Top with equal amounts of mango mixture, bacon and remaining bread slices.
