Brazilian Coconut Cookies
Brazilian Coconut Cookies
2/3 cup sugar
1/2 cup butter, softened
1/4 cup coconut milk (full fat)
2 tsp. vanilla extract
1 egg
2 cups flour
1/2 cup cornstarch
1/4 tsp. salt
1 cup Unsweetened Shredded Coconut

Prep: 20 minutes, Chill: at least 1 hour, Cook: 15 to 18 minutes
Makes: about 2 dozen cookies

1. Stir together sugar and butter in a large bowl. Stir in coconut milk, extract and egg, mixing until smooth. Add flour, cornstarch and salt and stir until smooth, then stir in coconut. Cover and refrigerate for at least 1 hour.

2. Preheat oven to 300°F and line 2 baking sheets with parchment paper. Roll dough into 1-inch balls and place on baking sheets. Drag a fork across the top of each and bake for 15 to 18 minutes.
