Sweet Red Pepper Relish
Sweet Red Pepper Relish
1 tbsp. olive oil
4 red bell peppers, finely chopped
1 onion, finely chopped
1/3 cup champagne vinegar
1/3 cup sugar
1 tsp. red pepper flakes
Salt and pepper to taste

Prep: 15 minutes, Cook: 20 to 30 minutes, Makes: about 2 cups 

1. Heat olive oil in a medium saucepan over medium-high heat. Add bell peppers, onion, vinegar, sugar and red pepper flakes.

2. Bring to a simmer and let cook for 20 to 30 minutes or until relish is thick and excess liquid has cooked off, stirring occasionally. Season to taste with freshly ground sea salt and pepper to taste.
