Salmon Burgers with Apple Wasabi Slaw
2 (12-oz.) packages Full Circle Sockeye Salmon Fillets, thawed and skin removed
1-1/3 cups panko breadcrumbs, divided
1/4 cup soy sauce
3 to 4 cloves garlic, minced
2 eggs
1 tbsp. olive oil
4 seeded ciabatta rolls, lightly toasted
2 tbsp. mayonnaise
1 tbsp. olive oil
1 tbsp. rice vinegar
1 tbsp. honey
2 to 3 tsp. wasabi powder
2 cups coleslaw mix
1/2 green apple, shredded
1/4 cup torn fresh cilantro leaves
Sriracha Mayo (optional):
1/4 cup mayonnaise
1 tbsp. Sriracha sauce

Prep: 15 minutes  Chill: 30 minutes  Cook: 6 to 8 minutes  Serves: 4

1. To prepare burgers, finely chop salmon and place in a medium bowl with 3/4 cup breadcrumbs, soy sauce, garlic and egg. Mix well and refrigerate for 30 minutes. Carefully shape into patties (mixture will be soft). Coat with remaining breadcrumbs.
2. To prepare slaw, stir together mayonnaise, olive oil, rice vinegar, honey and wasabi powder in a medium bowl. Add coleslaw mix, apples and cilantro and toss to coat.
3. Stir together mayonnaise and Sriracha sauce in a small bowl; set aside.
4. Heat olive oil in a large skillet over medium-high heat. Add salmon burgers and cook for 3 to 4 minutes on each side or until cooked through.
5. Spread bottoms with Sriracha mayo, then place a salmon burger on each. Top with equal amounts of slaw; close sandwiches.
