Turnip Apple Soup
Turnip Apple Soup
2 tbsp. butter
2 cups peeled, chopped turnip
1 cup peeled, chopped green apple
1 cup peeled, chopped rutabaga
1 cup chopped onion
1/2 cup peeled, chopped celery root
2 cloves garlic, minced
2 cups chicken broth
1 cup fat-free or regular half & half
1 tbsp. chopped fresh thyme
Freshly ground sea salt and pepper to taste
Crisp cooked sliced pancetta (in our Deli) and fresh thyme leaves (optional)

Prep: 20 minutes  Cook: 45 minutes  Serves: 4

1. Melt butter in a large saucepan over medium-high heat. Add turnip, apple, rutabaga, onion and celery root; cook for 10 minutes or until lightly browned, stirring frequently. Stir in garlic.
2. Add broth and bring to a boil; reduce heat and simmer, covered, for 30 minutes. Let cool slightly, then puree in a blender until very smooth.*
3. Add half & half, thyme, salt and pepper and cook for a few minutes more or until very hot. Ladle into bowls and sprinkle with pancetta and thyme, if you like.

*Use caution when blending hot liquids. Hold blender lid down with a kitchen towel while blender is running.
